Encouraging small businesses to grow their own
It’s nice to know the lettuce in your club sandwich is fresh. Even better to know it’s been grown on the premises. Finnish company Exsilio is encouraging cafés, restaurants and institutional kitchens to grow their own using a self-contained farming module, known as EkoFARMER.
The 13-metre long modules are made from reclaimed shipping containers. Crops inside are layered to capitalise on space, and most of the growing processes are automated, so green fingers and wellies are not required.
The EkoFARMER can produce up to 55,000 pots of lettuce per year – around three times the amount produced in a greenhouse. So, for restaurant owners looking to go green, it’s an ideal opportunity to turn over a new leaf.
