Middle Eastern dessert start-up, Republic of Booza, is bringing its traditional ice cream to Brooklyn, NYC. 500 years in the making, this ice cream uses two main ingredients – sahlab (ground orchid root) and mastic (a resin) – to create a smoother and denser ice cream texture that’s resistant to melting.
The rise of the health-conscious consumer means dessert restaurants and retailers are having to rethink their sweet proposition with small and sophisticated doses of indulgence. The new store will serve over 30 classic and experimental flavours ranging from Vanilla to Saffron Peppercorn.
