Food vans and fans came out in support of The Justice Food League, a band of food superheroes trying to save Denver one meal at a time. These vendors are reinventing meals on wheels to create affordable gourmet food like kimchi tacos, truffle mac-n-cheese balls and tempeh bacon banh mi (bacon for vegans). Many of these mobile kitchens are refurbished relics saved from the junkyard and powered by bio fuels and solar power.
This growing trend of pop-up eateries and gourmet vendors has been established in New York City for sometime. ‘The Vendys’ is like the Oscars of street food – the annual competition for Best Street Food Vendor doubles as a fundraiser that provides a voice for the thousands of people who sell food and merchandise on the streets of NYC.
